Cool Down with Kid-Friendly Summer Recipes

Try out these kid-friendly recipes cooked up by Galt House Hotel Executive Chef Brian Riddle!

Watermelon Freezzzzzz

Ingredients

  • 4 cups watermelon chunks, seeds removed
  • 1 cup ice
  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • 2 cups seltzer water, chilled
  • Mint leaves or sprigs, for garnish

Directions

In a blender, puree the watermelon, ice, sugar and lime juice and blend until completely liquid. Pour into a pitcher and top with the seltzer water. Pour into glasses and garnish with mint.

Banana Split Ice Cream Sandwich Cake

Ingredients

12 ice cream sandwiches
2 bananas, sliced
1  8 oz. can crushed pineapple
1 small jar Maraschino  cherries
1 cup sliced strawberries
8 oz. tub Cool Whip
Chocolate syrup
Caramel syrup
Nuts (your choice)

Directions

Unwrap ice cream sandwiches. Use them to cover the bottom of 13×9 pan. Cover sandwiches with sliced bananas and strawberries.

Completely cover with Cool Whip and garnish with crushed pineapple, cherries,  chocolate syrup, caramel syrup and nuts.

*You may need to break the last ice cream sandwich to make it fit right.

Soda Can Sweet-n- sour Chicken

Ingredients:

1 whole chicken (about 4 pounds)
1 12 ounce Mountain Dew (room temperature)
2 cloves garlic, minced
2 sprigs fresh rosemary
2 teaspoons olive oil
1 teaspoon dried thyme
1 small jar of sweet and sour sauce
Juice of 1 lemon

For Rub:

1 teaspoon paprika
1 teaspoon salt
1 teaspoon fresh rosemary, chopped
1 teaspoon dried thyme
1/2 teaspoon black pepper, ground
1/2 teaspoon lemon zest

Preparation:

Combine all rub ingredients in a small mixing bowl. Set aside.

Remove giblets and the neck from chicken. Sprinkle all over with rub, including cavity. Open can of Mountain Dew and discard half of it. Place, minced garlic, rosemary, thyme, lemon juice, and pepper flakes in it. Make sure to pierce two more holes on the top of beer can. Place chicken on top of can.

Preheat grill for a medium heat. Place birds on grill balanced by the soda cans. Grill over indirect medium heat for 1 1/2 to 2 hours until internal temperature of thigh is 170 degrees. Remove chicken when finished cooking and let sit (with soda can still intact), for 10 minutes before carving.
